Anchorage in August – Memorable Recipes to Take Home!

Fish with Mt McKinley Rub

As the summer heat decreases and the days stay long and comfortable, visitors take to the trails and in-town walking tours. Then they head to Anchorage’s best restaurants for a taste of the fresh fish and the locally grown vegetables that grace our tables at this time of year!

For those who like their fish (or chicken or ribs) spicy, we recommend the seasoning we call the Mt. McKinley Rub. Here is how it used:

Mt McKinley Rub

Moisten fish or meat such as ribs, chicken or turkey breast with mayo, then sprinkle with rub. The more rub used, the hotter the food will be. Cook or grill meat as usual.

To make it for home-use, combine the following and store at room temperature in a jar with a tight-fitting lid.

Ingredients:
4 T cumin
4 T chili powder
2 T coriander
1 T cinnamon
1 T brown sugar
2 T salt
1 T red pepper flakes
2 T black pepper

Alaska Scallops with Lime

Perhaps your taste runs to shrimp and scallops? Try grilling them with lime and chili sauce!

The sauce:
¼ cup lime juice (fresh is best!)
¼ cup white wine
1 T ginger – fresh and peeled
1 shallot, chopped
1/3 cup cream or ½ & ½
2 T chili sauce
6 T butter, unsalted
Salt and pepper

The scallops:
½ pound Alaska scallops
¼ cup olive oil
Garlic to taste (2+ cloves), chopped

Marinate the scallops in olive oil with salt, pepper, garlic, and red pepper flakes for a half-hour while preparing the sauce.

Cook the lime juice, wine, ginger, and shallot in a small pan, then reduce by half over high heat (about 3 minutes). Lower the heat, add the cream, and reduce by half again. Then remove from heat and whip in the chili sauce. Add butter one tablespoon at a time with a whisk; season to taste with salt and pepper.

Grill over medium heat until scallops are done – they will be opaque after 2 minutes per side. (estimated timed).

Serve with the sauce, over rice. A side of asparagus or fresh Alaska peas is nice. This recipe makes 4-6 servings but be prepared for guests who want seconds!
